4 lean sirloin steaks (1/3 pound each)
1 teaspoon Dijon mustard
4 thin slices Danish Ham
4 thin slices Svenbo or Danbo cheese
1/3 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1 egg -- lightly beaten
2/3 cup bread crumbs
1/3 cup butter
lemon and parsley -- for garnish
Pound steaks until approximately 4x7 inches. Spread with mustard. Top each with slice of ham and of cheese. (Both slices smaller than steaks). Fold steaks over, secure with skewers. Mix flour with spices. Dip each steak in flour on both sides, then in egg, finally in bread crumbs. Fry in butter for 4 minutes on each side until golden brown. Garnish. Serve with vegetables. Makes 4 servings.

6 Chopped onions
6 ga Cloves, minced
3 8-oz cans tomato sauce
3 6-oz cans tomato paste
3 Quarts tomato juice
9 tb Chili powder
4 tb Vinegar
4 tb Brown sugar
4 tb Ground cumin
2 ts Each: majorum, coriander
Ground pepper 4 Bay leaves
Dash: cinnamon, cayenne Pepper, hot sauce, ms. dash White wine & spagh sauce In very large pot, brown beef, onions and garlic; drain off fat. Add remainder of ingredients and bring to boil. Reduce heat, cover, and simmer for several hours, stirring occasionally. Great served with shredded cheddar cheese and chopped onion toppings.

1 1/2 lb Ground beef
19 oz Can tomatoes
14 oz Tomato sauce
32 oz Water
1 ts Paprika
1/2 ts Cayenne pepper
1 1/2 ts Worcestershire sauce
1/2 ts HP sauce
1 ts A1 steak sauce
2 ts Louisiana hot sauce
1/2 ts Dried mint
1 1/2 tb Chile powder
2 ts Salt
1 ts Cumin
1/2 ts Coriander
1/4 ts Cloves
1/8 ts Allspice
1/4 ts Nutmeg
1/2 ts Cinnamon
1 ts Black pepper
1/2 ts White pepper
1/2 ts Onion powder
6 dr Peychaud's bitters
1/2 ts Sugar
1/2 c Bread crumbs
Brown the ground beef in 2 tbsps olive oil. Add all the other ingredients, except the bread crumbs, and simmer for 3 hrs. Also, put can of tomatoes thru a food mill to remove seeds before adding to sauce. Finally add enough bread crumbs to thicken to the proper consistancy or however you like it.

1/4 c Soy Sauce
2 tb Cornstarch
1 tb Molasses
1 t Beef Bouillon; Instant
3/4 c Water
6 oz Frozen Chinese Pea Pods, 1Pk
5 oz Water Chestnuts; *
5 oz Bamboo Shoots; Drained, 1 Cn
11 oz Mandarin Orange Segments; **
* Use 1 5-oz can of water chestnuts that have been drained and sliced. ** Drain the can of Orange Segments, but reserve the syrup for the recipe. ˜------------------------------------------------------------------------- Cook and stir the meat, onion and garlic in a large skillet until the meat is brown. Drain off the excess fat. Mix the soy sauce, cornstarch, and molasses and stir this mixture into the meat mixture. Stir in the bouillon, water, pea pods, water chestnuts, bamboo shoots and reserved mandarin orange syrup and heat to boiling. Reduce the heat and simmer, covered, for about 10 minutes, stirring occasionally. Stir in the orange segments, recover and heat for about 2 minutes. Serve over cooked rice with additional soy sauce.

3/4 lb Mushrooms;sliced
1 pk Frozen artichoke hearts
9 oz, cooked and cooled
1 c Finely diced celery
1 pt Small cherry tomatoes
2 T Chopped chives
2 T Chopped parsley
2 c Salad dressing
-see below 2 ts Dijon mustard
---------------------------ITALIAN SALAD DRESSING--------------------------- 2 1/4 c Oil
3/4 c Wine vinegar
6 Shallots;finely chopped
1/3 c Chopped parsley
1/3 c Fresh dill weed
-salt & freshly ground -black pepper -to taste 1/3 ts Tabasco sauce
DRESSING: Combine all ingredients in a glass jar and shake. SALAD:In large skillet over high heat, saute meat in butter, a few cubes at a time until browned on all sides. Transfer to a large bowl and cool. Quickly saute mushrooms in remaining butter and add to meat. Add artichoke hearts, celery, tomatoes, chives and parsley. Mix lightly. Mix dressing with mustard. Pour over salad, toss, cover and marinate overnight.

4 lb Bottom Round Roast 2 tb Hot Pepper Sauce
3 tb Vegetable Oil
Preheat oven to 325 degrees. In a small bowl, combine the salt, pepper, and garlic powder; rub over the surface of the roast. In a Dutch oven, heat the oil to hot and brown roast on both sides. 1 can whole tomatoes -- undrained, cut up

5 tablespoons shortening
4 pounds lean ground beef
2 cups coarsely chopped onion
2 garlic cloves -- minced
4 bay leaves
4 tablespoons chili powder
3 tablespoons HERSHEY'S Cocoa
2 teaspoons oregano
2 teaspoons ground cumin
2 teaspoons sugar
1 1/2 teaspoons salt -- up to 2
1/2 teaspoon cayenne pepper
2 tablespoons chopped fresh cilantro
4 tablespoons all-purpose flour -- up to 5
1/3 cup cold water
People will probably be surprised to hear that the "secret" to this chili's gre at taste is cocoa. It adds a subtle rich flavor to slightly spicy chili.
In an 8-qt. saucepan or kettle, combine water, undrained tomatoes and tomato j uice; begin cooking over medium heat. Meanwhile, in a skillet, melt shortening : add beef and onion. Cook, stirring occasionally, until browned; immediately add beef and onion to tomato mixture. Add garlic, bay leaves, chili powder, co coa, oregano, cumin, sugar, salt and cayenne. Heat to boiling. Reduce heat; s immer 2-1/2 to 3 hours. Add additional water if chili gets too thick during co oking. About 30 minutes before chili is done, add cilantro. Mix flour with 1/ 3 cup water; add to chili. Continue to cook, stirring constantly, until chili
